1/4 cup sour cream
1/4 cup chopped prosciutto
2 tablespoons finely chopped onions

Crumb the cheese
Mix it with ricotta, sour cream, chopped onion, and prosciutto
Other seasonings can be added to give a varied flavor
Place 1 tablespoon of filling in the middle of each crepe
Roll the crepe tightly
Fold the ends to the middle
Insert one end into the other, so that the crepe stays closed, and secure with a toothpick
Fry the crepes in plenty of hot oil until they're golden brown on both sides
Drain well, remove the toothpick, and serve immediately
Makes 10 crepes.
