20 basic dough disks (see recipe on page 48)
Filling
1 white part of onion, finely chopped
2 tablespoons of olive oil
500g salmon cubes
500g zucchini slices
1/2 cup butter
1/4 cup all-purpose flour
2 cups milk
2 tablespoons English sauce
1/4 teaspoon paprika
20 basic dough disks (see recipe on page 48)
Filling

Caramelize the onion in olive oil until golden brown
Add the salmon and caramelize

Cook the zucchini in remaining olive oil until al dente
Combine with the salmon and half of the butter
Add flour and milk, cook for 3 minutes
Add English sauce and paprika

Fill the dough disks and fold into triangles
Place them in a refrigerator

Melt the remaining butter, dip the fritters in it, and bake until golden brown
Serve.
