Carefully cut the tomatoes in half to avoid crushing them
Wrap them in the cotton cloth
Place the cloth on a draining board and below it, a plastic sheet so that the tomato water drips off

Mash the garlic and spread each slice of cheese with it, on both sides
Using a brush, apply the transparent juice that dripped from the tomatoes onto each slice, followed by a drizzle of olive oil and salt to taste.
