Mix the sweet potatoes with butter, salt, egg, flour, and yeast until a smooth creamy dough forms
Beat well to form a silky dough
Remove spoonfuls of the dough and place in an oiled baking dish
Brush the edges with egg yolk and dust with grated Parmesan cheese
Bake in a preheated oven at 220°C for 35 minutes
If desired, broil to golden brown, then serve
Serve stuffed with a slice of cheddar or prato cheese
This pie will yield approximately twelve pieces
