800 g of sweet potatoes

Scrub the sweet potatoes well and cook them with their skins on in boiling water until they're tender
Mash the cooked sweet potatoes in a bowl
Add the flour and salt, and mix until smooth
On a floured surface, shape the mixture into rolls about 2 cm in diameter and cut them into pieces about 2 cm long
Dip each piece into a fork, pressing it gently with your finger (this will help prevent the fritters from becoming too smooth and allow the sauce to penetrate)
Cook the fritters in boiling salted water in small batches, stirring occasionally
When they rise to the surface, remove them with a slotted spoon
Serve hot in 4 batches
Obs.: Serve with your favorite dipping sauce.
