1 package of active dry yeast

1 cup of raw sweet potato, grated on the coarse side
300g of defumated Portuguese sausage or smoked ham, cut into small pieces

Dissolve the yeast in the water
In a bowl, place 4 cups of flour
Make a depression in the center and add the dissolved yeast, butter, eggs, salt, and sweet potato
Mix by moving your hands in circular motions from the inside out until you get a uniform dough
Scoop small portions of the dough and coat them with the remaining flour
Open the dough on the palm of your hand and fill it with 2 tablespoons of sausage
Curl the dough into a ball
Place the balls onto an ungreased baking sheet and let them rest until they double in volume
Bake in a preheated oven at 200°C for about 30 minutes, or until the fritters are golden brown on the bottom
Make about 60 fritters.
