500 g of screw pasta
3 tablespoons of olive oil
1 small onion, finely chopped
Juice of 2 Sicilian lemons
1/2 tablespoon of grated lemon zest from a Sicilian lemon
Salt and black pepper to taste

Preparation
Step 1
Bring 5 liters of water to a boil with 1 tablespoon of salt
Add the pasta in batches and cook until al dente (tender, but still firm)
Step 2
Heat the olive oil in a pan and sauté the onion until it's golden brown
Drain the pasta and add it to the pan with the onion
Mix well and remove from heat
Add the lemon juice and zest, season with salt and pepper
Sprinkle with Parmesan cheese and serve immediately
