Place the mascarpone cheese, butter, and water in a small saucepan
Bring to a simmer over low heat, stirring until it reaches a gentle boil
Let it cook for 4 minutes, then remove from heat
Beat the egg yolks until they thicken and cover the back of a spoon
Set aside
Remove the saucepan from the heat and stir in the rum
Pour into a bowl set over ice to cool
Mix in the whipped cream, making sure it's well combined
Fold in the egg whites whipped to a snow-like consistency
Place in a decorative mold or serving dish and refrigerate for at least 1 day before serving
Serve chilled, cutting into 6 portions.
