Mix the sugar and water
Bring to a boil, stirring constantly until it thickens
Let simmer for about 7 minutes without stirring
Remove from heat
Gradually add the egg whites while whisking continuously
Add vanilla extract and shredded coconut
Whisk well
Add heavy cream and mix
Shape into a ring mold with a diameter of 20 cm, and refrigerate until firm
To serve, dip for a few seconds in warm water and unmold
