3 egg whites
1 pinch of salt
2 tablespoons of dietetic fondant for oven and grill
2 tablespoons of unsweetened cocoa powder
1 tablespoon of skimmed milk
1 tablespoon of wheat flour

Filling
150g white cheese, desalted
2 tablespoons of dietetic fondant
4 slices of pineapple in syrup, dietetic
1/2 cup (cherry) of cherry gelatin, dietetic

Dough
Preheat the oven to 200°C
Beat the egg whites with a pinch of salt in a bowl until stiff peaks form
Add the dietetic fondant and continue beating until a firm meringue forms. Reserve
At another part, mix the cocoa powder, skimmed milk, and wheat flour, sift them twice and add to the meringue
Gently fold with low-to-high movements
Pour the dough into a greased baking dish lined with parchment paper and bake in a hot oven for about eight minutes
Carefully unmold onto a lightly floured plate dusted with dietetic fondant, remove the parchment paper, and reserve
Filling
Beat the white cheese with dietetic fondant until smooth
Add four slices of pineapple, diced and drained, and mix well
Spread a layer of the gelatin over the dough and top with the pineapple cream
With the help of a cloth, roll up the dough
Transfer to a serving dish and dust with a mixture of dietetic fondant and cinnamon powder.
