Preheat the oven to high temperature
In a baking dish, season the sea bass with salt and black pepper
In a medium bowl, mix the carrot, sweet herb, and egg white
Distribute over the fish and drizzle with olive oil
Cover with aluminum foil
Bake, basting with juice every now and then, for 40 minutes or until the flesh separates in flakes
Accompaniment
Cut the sweet herb stalks into strips
Combine salt, vinegar, and olive oil and mix well
Reserve a portion
Distribute the rest on a platter
Remove the aluminum foil from the fish and transfer it to the platter
Top with reserved sweet herb and serve.
