2 onions, peeled and cut into cubes
3 slices of pineapple in syrup, drained and cut into cubes
3 stalks of celery, cut into cubes
1 cup of cooked chicken breast, or turkey breast, cut into cubes
salt and black pepper to taste
4 lasagna noodles, cooked and cut in half lengthwise
Sauce:
1/2 cup of grapefruit juice
1 tablespoon of lemon juice
1 tablespoon of mustard
1/2 cup of water
1 tablespoon of cornstarch
2 tablespoons of grated Parmesan

Combine all salad ingredients in a bowl (except lasagna noodles) and mix well
Stuff each lasagna noodle with a portion of the salad and roll up
Prepare the sauce: combine all ingredients in a pan and cook over low heat until slightly thickened
When ready, pour the sauce over the filled ravioli
Serves 4.
