Rinse the green peas and let them soak overnight
Cook the green peas in a pressure cooker with enough water to cover, or until tender
Set aside some green peas to use as garnish
Blend the cooked green peas with 1 cup of the cooking liquid, tahini paste, salt, lemon juice, and enough water to form a smooth and creamy hummus
Add more water if necessary
Transfer the hummus to a small bowl or plate, top with chopped parsley, and drizzle with olive oil
If desired, sprinkle with paprika and garnish with whole green peas
Refrigerate until ready to serve
