Wash and cut the tomatoes into 1/2-inch thick rounds
Place them on a clean cloth or paper towels, sprinkle with salt, and let them sit for about 30 minutes
Pat them dry and coat with wheat flour, removing excess
Fry them in a hot skillet with olive oil, then drain on paper towels
When all the tomato rounds are fried, remove any remaining grease from the skillet, and add tomato sauce and minced garlic
Simmer over low heat, covered, for 5 to 10 minutes
Serve warm or at room temperature
