1/2 cup of tahini

4 tablespoons of lemon juice
1 cup of parsley finely chopped
2 cloves of garlic

Mash the garlic with 1/2 teaspoon of salt
A little at a time, add the tahini and beat well with a wooden spoon
Add a little water alternately with the lemon juice
The water thickens the mixture and the lemon juice makes it more liquid
Continue adding gradually until you reach the desired consistency
Add the parsley and mix
Check the salt
Serve with a serious bread, or as an accompaniment to fried fish.
