Add the salt and enough cold water to obtain a manageable dough
Let it rest for 1/2 hour
Drain all the liquid from the ricotta and knead it in a bowl, finely chop the onion and parsley
Add the cheese, egg yolk, and salt
Mix everything very well
Roll out the dough, cut into slices, place the filling, and press the edges to prevent opening
Fry in hot oil
Before bringing the oil to the fire, add 1 tablespoon of alcohol so that the pies stay very dry
