1 package of puff pastry, chilled (300 g)

5 tablespoons of olive oil
1/2 kg of ground beef
4 tablespoons of chopped parsley

5 tablespoons of heavy cream
4 eggs
4 tablespoons of milk

Thaw the puff pastry and, with 2/3 of it, line the bottom and sides of a removable-bottom tart pan with a 24 cm diameter
Chop the onion and sauté in 5 tablespoons of olive oil
Add the ground beef and cook well
Add the parsley, seasonings, and heavy cream
Cover this mixture with the pastry
Mix the eggs, milk, and salt
Fry in hot olive oil until it starts to firm up
Place over the beef
Sprinkle with green onion
Cover with the remaining pastry
Use the leftover pastry to decorate the tart
Garnish with a yolk and bake in a moderate oven for 30 or 35 minutes.
