In a large Dutch oven, combine all ingredients with the breast side down for each duck
Cover and bring to a simmer over medium heat
Let cook for 1 hour, always keeping the pot covered until the meat is tender (test by poking with a fork; it's done when no more pink liquid remains)
Transfer to a preheated oven at 200°C and roast until golden brown
Using a spoon, remove all excess fat from the roasting pan and discard
Reserve the juices for serving with the duck cut into pieces
