Step 1: In a pressure cooker, melt the butter and caramelize the bacon
Step 2: Add the onions, tomatoes, and beef
Season with salt and pepper
Step 3: Add the vegetable broth and tomato sauce
Bring to a simmer with the lid closed and cook on low heat for 20 minutes after the pressure cooker starts
Step 4: Release the pressure, open the pot, add the chouriço sausage, and continue cooking without the lid for another 15 minutes
Garnish with chopped parsley and green onion
Serve immediately.
