1 tablespoon of potato starch

On one side, prepare a cream with condensed milk, pure milk, and potato starch, everything thickened over heat
Pour this cream over the biscuits
Next, place a layer of well-mashed dried fruits and raisins, which should have been soaking in rum overnight
Sprinkle with chopped nuts
Then put a layer of whipped cream
Repeat the operation until all the ingredients are used up, always starting and ending with a layer of biscuits
Press well to bind and refrigerate for two or four hours
Unmold, remove the paper, cover with whipped cream and garnish with pieces of nuts, raisins, and orange peel.
