3 boneless, skinless chicken breasts, cut in half

10 thin slices of garlic
2 tablespoons fresh thyme, well chopped
1 tablespoon dried oregano
5 anchovy fillets, rinsed

Season the chicken with salt and black pepper
In a large skillet, melt the butter over medium heat
Add the chicken, reduce heat to low, and cook for 10 minutes or until the meat is tender
Reserve on a platter
In the same skillet, sauté the garlic for 2 minutes or until lightly browned. Reserve
Add the thyme, oregano, and anchovy fillets to the skillet and sauté for 1 minute, breaking up the anchovy with a spoon
Add the reserved chicken and garlic and warm through
Arrange on small platters and serve.
