Wash, clean and dry the fish
Cut into 5cm pieces
Place in a pot and cover with water
Add salt, butter, pepper and salt
Cook over high heat for about 10 minutes
Remove salt and drain the fish
Reserve the broth
Hold the fish warm
Reduce the fish broth to approximately 1/2 liter
Beat the egg yolks with cream
Add a little hot broth
Pour everything into the pot
Stir until it thickens, but don't let it boil
Serve with slices of bread
