2 tablespoons of crumbled bacon
1 large onion, finely chopped (170 g)
2 cucumbers, peeled and seeded (230 g)
1 tablespoon of butter or margarine
1 cup of breadcrumbs from a light breakfast
1 large egg, lightly beaten
1 tablespoon of chopped parsley
1 tablespoon of lemon juice
salt and black pepper to taste
1 fish of approximately 1 1/2 kg (pescada, namorado, vermelho, tainha, olho-de-boi) cleaned, with no bones, and a few skinless pieces
cucumber slices for garnish

Fry the bacon in a skillet until crispy
Add the onion, cucumber cubes, and butter
Cook while stirring for 3 minutes
Remove from heat and let stand for 5 minutes
Add the breadcrumbs, egg, parsley, lemon juice, salt, and black pepper
Place the fish on a double layer of aluminum foil, greased, large enough to wrap it around
Dry the cavity and moisten with an additional squeeze of lemon juice
Season with salt and black pepper to taste
Stuff the fish with the cucumber and bacon mixture, close with toothpicks
Wrap and seal with aluminum foil
Place in a baking dish and bake in a moderate oven (180°C) for 30 minutes
Open the "package" and carefully transfer the fish to a serving platter
Remove the toothpicks
Garnish with cucumber slices
Dish out in 5 portions.
