1 lime rind, grated
oil for frying

Peel the zucchinis, cut them in half lengthwise and remove the seeds
Cut into thick slices
Pat dry with paper towels and season with salt
Dredge in flour, removing excess
Lightly beat the eggs with salt, black pepper, and lime rind
Coat with this mixture and let drain
Fry in hot oil until golden
Drain on paper towels and serve 12 per serving.
