6 ripe pears

Peel the pears and immediately place them in a bowl with water and lemon juice
Mix the 3 cups of water, sugar, and cinnamon, then bring to a boil
Let it simmer
When the sugar dissolves, add the pears
Reduce heat, cover the pan, and cook for about 25 minutes, stirring occasionally until they're tender but not mushy
Let the pears cool in the liquid
DRAIN, arrange on a plate, and refrigerate
Serve with the syrup made as follows: beat the egg yolks with sugar until thickened
Heat the mixture over warm water, slowly adding the orange juice while constantly beating until thickened
Remove from heat and from the water
Let it cool and serve over the pears
