In a medium bowl, whisk together the egg whites, lemon zest, and confectioners' sugar until smooth and creamy (about 2 minutes)
Above a pot of simmering water, gradually add the two wines, whisking constantly until stiff peaks form (about 7 minutes)
Cover with plastic wrap in direct contact with the surface to prevent a skin from forming
Let it cool for about 10 minutes
Transfer to four small serving cups and let it come to room temperature
Cover with plastic wrap and refrigerate for at least 1 hour before serving
