Peel the pears, keep the core and brush with lime juice
In a pot combine the pears, wine, sugar, water, cinnamon, and cloves
Let it simmer, reduce heat and cook for 20 minutes
Let it cool
Cream
Boil the milk with vanilla in a pot
Beat the egg yolks with sugar and flour, slowly add the hot milk while whisking until a thick cream forms
Remove the pears and spices from the wine
Put the wine in a pot and let it simmer
Let it cool
Distribute the cream into individual cups, place a pear on each and top with the cooled wine syrup
Sprinkle white pepper and refrigerate.
