4 firm pears
1 tablespoon lemon juice
1 room temperature egg white
3 tablespoons ground cinnamon
1/2 cup almonds, peeled and toasted into thin strips
a pinch of nutmeg
Optional dusting: 1 tablespoon ground cinnamon, 1/2 teaspoon ground canella

Cut the pears in half lengthwise
Remove the seeds and brush the pear surfaces with lemon juice
Place the pears, cut side down, in a 20 cm diameter refrigerator dish
Microwave on high for 3 minutes
Beat the egg white until stiff peaks form, then add ground cinnamon while beating
Add the almonds and nutmeg, mixing delicately
Turn the pears over and top with an almond cream
Microwave on medium for 3 minutes, then increase to high and cook for an additional 2-3 minutes or until the fruit is tender
Let cool and dust with a mixture of ground cinnamon and canella
