4 fresh pears, peeled, seeded, and cut lengthwise

1 cup water
1/4 teaspoon ground cinnamon
1/2 teaspoon vanilla extract

Combine the sugar, water, cinnamon, and vanilla in a large skillet
Bring to a boil over medium heat, stirring to dissolve
Reduce heat and add the pears
Cook for 10-30 minutes, turning occasionally, until they're tender but still hold their shape
Let cool, cover, and refrigerate
Before serving, whisk together eggs, sugar, and wine in a saucepan over low heat, stirring constantly, until the sauce thickens and foams
Remove from heat and let cool slightly
Drain the pears and arrange on a platter
Ladle the warm sauce over the top
