Peel the mango and puree the pulp in a processor or blender
Combine the lemon juice and vanilla extract, blending until a smooth purée forms
Spread the purée onto a 23 cm diameter plate
Cut the pears in half and then make vertical cuts, without separating the slices from the stem
Place the pears on top of the purée, arranging each pear to resemble an umbrella
Cover with plastic wrap and microwave at high power for 8 minutes
Let it rest in the oven without opening, for 5 minutes
Let it cool, decorate with Hortelê leaves, and serve
