2 envelopes of unflavored gelatin
1 cup of water
4 packages of guava pulp, thawed (400g)
4 egg whites
1/3 cup of granulated sugar

In a medium saucepan, sprinkle gelatin over water and let it hydrate for 3 minutes
Place over low heat, stirring constantly, until dissolved
Add guava pulp and place the saucepan over a basin of ice water and stir occasionally with a wooden spoon until thickened
In a blender, beat egg whites until frothy, add sugar and continue beating until stiff peaks form
Carefully fold gelatin into the mixture using a spatula or wooden spoon
Transfer to the mold, cover with plastic wrap and refrigerate for 2 hours
Unmold and serve.
