4 pears with stems and peeled
2 cups of water
1/2 cup of sugar (for cooking the pears)
juice and zest of 1/2 lemon
juice of 2 oranges
2 tablespoons of butter or margarine
1 tablespoon of sugar
4 tablespoons of jam or preserves
1/2 cup of warmed brandy
4 pears with stems and peeled
2 cups of water

Wash the pears, leaving the stems intact, and peel them without removing the stems
In a saucepan, combine the water, sugar, lemon juice and zest
Bring to a boil
Add the pears and simmer over low heat for 15 minutes. Reserve
In another skillet, melt the butter or margarine
Add the sugar and, stirring constantly, let it lightly brown
Add the orange juice, jam or preserves, and stir well
Place the pears in this sauce and cook for 12 minutes, moistening with the sauce and turning them occasionally
Pour the warmed brandy around and ignite to flambé
Serve 4 portions.
