1 pork rib of 1-4 kg
8 pounds of black pepper

Sauce:
1/2 cup of Port wine
100g of dried dates
250g of black plums
250g of dried figs
250g of raisins without pits
200g of cut mango in slices

Mix the pork ribs with the seasonings and let it rest for 3 hours
Roast in the oven
Mix all the sauce ingredients and let it cook for about 40 minutes
When the pork ribs are done, drizzle with the fruit sauce and garnish to taste.
