300 g smoked haddock, skin removed, cut into small pieces
2 tablespoons finely chopped onion
1 tablespoon finely chopped green pepper
1 tablespoon finely chopped red pepper
2 tablespoons freshly squeezed lime juice
1/4 cup water
2 tablespoons chopped fresh coriander
1/4 cup olive oil
1 teaspoon salt to taste
1 head of lettuce with leaves cut into strips

In a large salad bowl, slowly combine all the ingredients except for the lettuce
Cover with plastic wrap and refrigerate for about 1 hour
Serve with the lettuce strips.
