Sauté the onions in 1/4 cup of butter
Puree the passionfruit pulp with the thyme leaves until it reduces by half
Let it cool down
Add the remaining butter and blend until smooth and creamy
Chill in the refrigerator
Season the pork rump with salt and black pepper
Spread the passionfruit sauce over the surface of the pork, then let it rest in the refrigerator for three hours
Transfer the pork to a baking dish, drizzle with white wine, cover with aluminum foil, and bake at medium heat for 90 minutes
Remove the foil and let the top layer brown
Remove from the oven and keep the pork warm
Place the baking dish under the broiler and reduce the sauce that formed during cooking
With a spoon, remove all the fat and serve with sliced meat.
