3 tablespoons of butter
3 tablespoons of wheat flour
1 cup of milk
1/2 cup of heavy cream
to taste salt and pepper
6 servings of cooked spinach, drained and chopped
1/4 teaspoon of nutmeg
sliced roasted turkey (enough for 6 servings)
Parmesan cheese
3 tablespoons of butter
3 tablespoons of wheat flour
1 cup of milk
1/2 cup of heavy cream

Melt the butter, add the flour and mix well until smooth
While this is happening, bring the milk and heavy cream to a simmer and whisk in with the butter mixture, stirring vigorously until thickened
Season with salt and pepper
In a saucepan, combine the spinach, nutmeg, and half cup of sauce
Heat through but do not let boil
Arrange the turkey slices on a refractory dish, spooning some of the remaining sauce over them
Add a little Parmesan cheese to the remaining sauce and spread it over the turkey slices
Sprinkle with additional Parmesan cheese and top with small pieces of butter
Place in the oven for a few minutes to lightly brown
