Blend all the spices, except for the wine, in a blender
When everything is well mixed, add the wine, mixing without beating
Arrange the turkey in a baking dish and moisten it with half that mixture
Let it rest for one day and then another in the refrigerator
Tie the turkey's legs together so they don't spread apart during cooking
With the other half of the seasoning, moisten the turkey in the baking dish, cover with aluminum foil and bake at medium temperature
Two hours later, check if the skin has risen
If it has, remove the foil and let it brown
If not, continue baking
Serve thinly sliced with accompaniments
