Aluminum foil, skewers and twine
Wash and dry the turkey cavity
Mix salt and black pepper and rub it inside and outside the bird
Stuffing
In a low heat, fry the onion in butter for 5 minutes
Add the turkey or chicken breast and cook, stirring, for 1 minute
Remove from heat and place in a bowl
Add brandy, prosciutto, walnuts, parsley, eggs (beaten) and toasted pork to the mixture
Mix until homogeneous
If needed, add more toasted pork

Fill the bird with three-quarters of the stuffing
Raise the breast skin and place the rest of the mixture there
Pull the skin down and tie with skewers
Preheat the oven to medium temperature

Tie the turkey legs with twine, place it in a roasting pan with the breast up and brush the whole bird with butter
Cover with aluminum foil and roast for 2 hours
Regulate constantly with the sauce that forms

Remove the foil, but leave protection for the wings
Roast for another
30 minutes
Place grapes and roast for an additional 10 minutes

Put the turkey in a serving platter, arrange grapes around it and cover with aluminum foil
Sauce
Let the sauce formed in the roasting pan simmer in a saucepan
Add brandy and heavy cream, mix and simmer for 5 minutes
Adjust seasoning
Drizzle grapes with the sauce and serve the remainder on the side.
