8 clean sardines

Season the sardines with salt and black pepper to taste. Reserve
Fry the garlic in olive oil or vegetable oil until golden brown
Add the parsley breadcrumbs, mix well, and remove from heat
Place in a bowl and combine 1 egg and scallion
Season with salt and black pepper
Stuff each sardine with some of this mixture and close tightly
Coat with wheat flour, the remaining 2 eggs lightly beaten, and biscuit flour
Place in a refrigerator-safe form, arrange some parsley leaves on top, and bake in a preheated oven at 400°F for 25 minutes or until the sardines are cooked
Serves 6 to 8 people.
