6 fillets of cod
Salt and lemon juice to taste
1 cup of all-purpose flour
2 beaten eggs
2 cups of breadcrumbs
2 cups of shredded mozzarella cheese
1 tomato, sliced

Season the fillets with salt and lemon
Dredge in flour, then eggs, then breadcrumbs
Fry in hot oil
Place a slice of cheese and tomato on top of each fillet
Bake in a preheated oven at 300oC until the cheese melts
Serve.
