Preheat the oven to 250°C (very hot)
In a bowl, season the fish with lime juice and salt
Cover the bottom of a baking dish with half the spinach and arrange the fish on top
Position the remaining spinach, sprinkle with grated ginger, and drizzle with coconut milk
Cover with aluminum foil and bake in the preheated oven until, poking the fish with a fork, it easily breaks apart (around 15 minutes)
