Preheat the oven to 250°C (very hot)
In a bowl, season the fish with lemon juice and salt
Cover the bottom of a refractory dish with half the spinach and distribute the fish on top
Arrange the remaining spinach, sprinkle with grated ginger and pour in coconut milk
Cover with aluminum foil and put it in the preheated oven until, poking a corner of the fish with a fork, it easily breaks off (about 15 minutes)
