Melt the butter in a skillet, but don't let it brown
Fry the pear chunks until heated through, then add the liquor or brandy and ignite
Serve the pears in individual ramekins
Leave the sauce in the skillet
Add 3 tablespoons of chicken broth
Let the mixture simmer, then stir in the cream until the sauce thickens slightly
Serve over the pears
Sprinkle with a pinch of ground nutmeg
Ready to serve.
