1/2 watermelon (approximately 7 kg)

5 cups of sugar
3 cups of vinegar
5 cinnamon sticks

1 tablespoon of Jamaican peppers

Cut the watermelon into slices
Use the fruit for a fruit salad
Remove the dark green rind and leave only the pale green part
Cut this part into cubes (approximately 10 cups)
Mix the cubes with salt and cold water in a large bowl
Cover with cloth and let it rest for one day
The next day, drain the cubes
Place them in a pot and cover with fresh water
Bring to a boil and simmer for about 15 minutes or until tender
Drain and reserve
Mix sugar and vinegar and place in the same pot
Tie the spices in a bag and place in the pot
Bring to a boil and simmer for about 15 minutes or until the syrup thickens
Add the watermelon cubes slowly (1 cup at a time) and simmer for 25 minutes or until the watermelon is shiny
Remove the spice bag and fill sterilized jars with the pickles, leaving some headspace
Close tightly
Make approximately 8 jars of 1/2 liter each
