12 pimientos
1 cup of ricotta cheese
2 tablespoons of cream
2 tablespoons of cream cheese
4 small cheddar cheeses, cut into cubes
2 tablespoons of grated Parmesan cheese
Salt to taste
Olive oil to taste
Calabrian pepper flakes to taste
1 tablespoon of chopped fresh herbs and capers
12 pimientos
1 cup of ricotta cheese

1 Preheat the oven to 400°F
Rinse and dry the pimientos, removing any seeds or membranes
2 Bring a pot of water to a boil
Add salt and the pimientos
Simmer for 15 minutes
Drain and let the pimientos cool with their tops facing down on paper towels
3 In a bowl, mix together ricotta cheese, cream, cream cheese, cheddar cheese cubes, and grated Parmesan cheese
Season with salt, olive oil, Calabrian pepper flakes, fresh herbs, and capers
4 Stuff the pimientos with the cheese mixture
Place them in a baking dish and bake for 20 minutes or until golden brown
Serve immediately.
