Wash the peppers, remove the white part and seeds
Cut into strips
Heat the oil and add the peppers
Simmer over medium heat, stirring until cooked through
Don't let it burn
Sprinkle salt, garlic, and black pepper
Reduce heat, cover, and cook for 4 minutes, stirring occasionally
Remove the lid, increase heat, and cook until the peppers are tender but still firm
Gently beat the eggs with salt and water
Pour over the peppers
Don't stir until the eggs start to set; then use a fork or spatula to mix well so that all liquid can cook
Don't overcook
Serve in a warm dish
