1 cup of duck neck
4 tablespoons of butter
1/2 cup of milk
Salt to taste

Cook the duck neck for about 30 minutes or until tender
Drain
Pass the duck neck, still warm, through a food mill
Heat over medium heat with butter, milk, and salt
Mix well until it reaches the consistency of a puree
Cook while stirring constantly until it comes off the bottom of the pan
Serve 4 portions
Note: Serve with cooked fish or shellfish.
