1 kg of zucchini
1/3 cup (cha) of olive oil
1 cup (cha) of rice
3 cloves of garlic, minced
2 onions, sliced
2/3 cup (cha) of grated cheese
3 eggs
Salt, chopped fresh parsley, and black pepper to taste

Cut the zucchinis into horizontal slices
Heat half of the olive oil and add the zucchinis, salt, and black pepper
Cook for 10 minutes
Stir occasionally by scraping the bottom of the pan during cooking time
Let it cool and chop into cubes
Meanwhile, cook the rice in boiling salted water for 10 minutes, stirring occasionally
Drain the rice in a strainer, rinse with cold water, and let it drain well
Heat the remaining olive oil and sauté the garlic and onion
In a greased baking dish, mix together the zucchini, sautéed garlic and onion, chopped parsley, cooked rice, and grated cheese
Season with salt and black pepper and drizzle with beaten eggs
Bake in a medium oven preheated for about 30 minutes.
