In a skillet, heat the olive oil and sauté the chopped onion and red bell pepper until tender
Mix in a bowl the four cups of cooked rice with the beaten eggs or scrambled eggs
Spread this rice mixture onto a pizza pan and bake in the oven for 10 minutes
Remove the rice from the oven, spread
on top of it the tomato sauce, 100 grams of grated mozzarella cheese, the sautéed onion and bell pepper,
the golden brown peppers
Add
more mozzarella on top and garnish the pizza with olive leaves
Bake in the oven for an additional 10 minutes
If desired, sprinkle anchovies on top of the pizza.
