For the dough
2 1/2 cups of wheat flour (300g)
1 tablespoon of active dry yeast
1/3 cup of olive oil (80ml)
2/3 cup of water (160ml)
For the topping
3 medium tomatoes (360g), sliced into wedges
3 cups of grated Minas cheese (300g)
1 pinch of salt
1 tablespoon of oregano
2 tablespoons of olive oil

Preheat the oven to 200°C (hot)
Grease a pizza pan with olive oil and place it in a hot oven. Reserve
Make the dough: in a processor, beat all the ingredients until they form a smooth batter
Shape the dough into a ball, transfer it to a floured surface, and roll out to a thickness similar to the pizza pan
Place the dough in the prepared pan and prick it with a fork in several places
Bake in the preheated oven at 180°C (medium) for about 20 minutes until the crust is firm
Make the topping: remove the dough from the oven, spread the tomato and cheese on top, season with salt and oregano, and drizzle with olive oil
Return to the oven for about 3 minutes until the cheese is melted
Remove and serve
